Tentsuyu

Tentsuyu is a dipping sauce for tenpura. And, you can use this sauce for other proposes. Great for takoyaki as well.

If you want to make sauce for tempura bowl, add 1 part of sugar to the recipe.

If you want to turn the finished sauce into the tempura bowl sauce, add 1/6( about 0.15 of sugar to the sauce amount.

Ingredients

Dashi 4
Soy sauce 1
Mirin 1
Katsuo bushi (bonito flakes)

Cooking Directions

Prepare a sauce pan

add dashi, soy sauce, and mirin into the pan, and turn the stove.

Do not boil the sauce.

Add katsuo bush bonito flakes and turn-off the stove.

Wait until the flakes sits on the bottom of the pan.

Use a bowl and a colander. Pour the finished sauce to the bowl by filtering through the colander to remove katsuo bushi.

Tips: Make a large quantity and pour the dipping sauce into the ice cube maker and put it in freezer. After the cubes or frozen, put them in a ziplock and keep it in the freezer for later use.
